Hello again its the Coffee Man here. So, many people including me love to live in rural areas. Its quite ,its beautiful and unspoiled nature, and the freedom level is a lot higher when your closest neighbor is a half a mile away. But... no high speed internet, none, zero, not even cell service. Now I know what your thinking sounds great right? It is, until you start a website and try to really make it work. We found a temporary work around and have been using that for 2 years! It wouldn't work if it rained, if it was cloudy, if there were too many people at the lake, or if it just didn't feel like working. Top speed of this nameless work around, (it's a little bit of a secret) is 1 mb per second! It would never last all day and the upload speed was abysmal, 30 minutes to upload a picture. Please make mental note of all the pictures on our website and do the math. One day driving home I noticed Co-Mo Connect running fiber on our road! The level of excitement was high, We called to sign up for the service and found out that they had reach the end of there service area, four poles away from our house! We went to our local Co-Mo office, with coffee samples and begged for them to take our money. That was 2 month ago and it has been a bit of a journey, but we have high speed internet! Thanks to our friends at Co-Mo Connect. We will try to post more often in the future. And more pictures of the farm, and perhaps a video or two from the roastery. Bear with us because we have developed no internet habits that are hard to break. Basically, I cant upload pictures because I've got other things to do today. Hello again, it's the coffee man. I have a new way to enjoy Firefly Valley Farms great coffee! A friend introduced me to the vacuum pot. This friend shall remain nameless to protect the innocent. I got my own vacuum pot because I liked the way it brewed coffee and partly because she couldn't make coffee the way I like it. The cost was around 40-50 dollars and I love it! It looks like an hourglass, you fill the bottom with water and put the grounds in the top. The grind is very important it is several steps more course than auto-drip, but not quite to french press. We will be adding another grind to our website, specifically for the vacuum pot. Ok back to it, you add 24 oz. of water and 3 well rounded table spoons of coffee. The pot uses induction heating to heat the water and the heating of the water forces the water into the top part(remember the hourglass) and the water mixes with the coffee. The pot boils for an adjustable time, (I set mine to 180 seconds) then as it cools the water returns to the bottom of the pot. I forgot to mention that between the levels is a reusable cloth filter. This also creates a bit of a vacuum (hence the name) and the result is an amazing cup of coffee. FYI, you will need to let it cool after this process or you can do like me and put a glove on and add ice. Cause ain't nobody got time to let coffee cool naturally. Our peaches and nectarines are awake now and full of blossoms. The bees are hard at work doing their job. But we live in Missouri so we might still have some late April/early May frosts to deal with. Peaches and Nectarines are the first to wake up after the long winter but they are also the most at risk for frost damage if the temps dip below 28 degrees. At >28 degrees, we could lose up to 90% of the fruit. AGAIN! Please send us warm thoughts and prayers.

In Farm living is the life for me
Well, I'm not sure if this is the real spring in Missouri or a typical false spring. Whatever the case is it's time to trim the fruit trees. For all five of you that read the first blog page about trimming fruit trees, this is another year and another challenge. Each year is a little different as each year the tree has reached a different level of growth. This is year 7, we should have a good harvest this year. We are better prepared than in previous years. I feel that we know what to expect ish. Springtime is always a magical time on the orchard because we have looked at a leafless landscape for about 4 months now and the trees coming to life is always a joy. Also, the hopes of a great year are never higher than in springtime. Today 3/6/2022 we will be focusing mostly on the peach and nectarine trees, because they wake up first. They're also the most vulnerable, for if this is a false spring and we have a deep freeze we can lose all of the fruit are the year. We have approx. 75 peach and nectarine trees to trim. They are very tall, and we must stand of a farm vehicle to reach the tops. We have some help this year and we are going to try and save the wood to sell to BBQ'ers. I am not crazy...it is the caffeine that sets my mind in motion, it is thru beans of java that thoughts acquire speed. The hands acquire shakes, the shakes become the warning.... that....I AM.... IN COMPLETE CONTROL..... OF MY ADDICTION!!

Yesterday we worked a pop-up market in Versailles, (don't make me pronounce it) and it was a lot of fun. Mostly because a lot of our customers had never heard of us. When we work a market, we set up 2 tables, one with bagged coffee and the another with airpots filled with various coffees. Our goal is to get every customer to take the world coffee tour. Trying up to 8 different coffees from around the world. We tell them about each coffee region and what makes it unique, while the coffee in their cup is cooling so they can taste it. So, they have tasted coffees that range from light roast and flavorful to dark roast and smooth. This is part of the fun, when someone tells us they are a dark roast coffee drinker, and they buy a light roast because they've never tasted coffee with that much flavor that is a huge victory for us! Also, when someone informs us that they put creamer in their coffee then walk away drinking it black, that's a victory! I make them try it first. We tell them the health benefits of drinking fresh coffee and organic coffees. Then we tell them about the countries that coffee is produced in and what a huge difference in their lives it is to grow specialty coffee. That by buying that coffee you are helping poor workers have a better life. Then by the end of the tour they've typically drank the equivalent of a full cup of coffee. So, yesterday I realized that by spreading info and literally getting people high of caffeine, I have the greatest job in the world! I look forward to the day when selling coffee and running my little farm is my full-time job. We will post before every show so if you see us please ask us the take you on the coffee tour. I promise you will have a great time. I'll see you out there, and remember that, life is your cup, drink it up. Coffee Man out!

We have missed Farmers market season. So, we're going to be at a pop-up event in Versailles, at the Bunkhouse at Lead Farm. We'll be there with 20 or so other local vendors. Check out their website for more info www.thebunkhousemotel.com. We're a little nervous we're not sure how many people are going to be there. Dusting off the old Farmers Market set-up brings back memories of the best year we ever had. We roasted lots of coffee but come early to get YOUR favorite single origin coffee. Also, we will be offering products that you may have ever tried! Hot Kona Mochas, Hot Caramel, Hot Vanilla lattes, Chai, and hot chocolate. In Coarse Ground? Drip? Fine?
I think this is my favorite way to grind coffee, if time and mess isn't a factor. Great for French press and cold brewed coffee. Our friends, The Soap Sisters use a coarse grounds in their coffee scrubs and soaps.
